Dates are relatively long-lasting thanks to their high sugar content, but wrong storage can make them harden, crystallise or even mould. Basic Principles of Date Storage

  • Avoid open air β€” use an airtight container so dates do not dry out or absorb odours.

Storing Dried Dates (Ajwa, Safawi, Piarom, dried Medjool)

Dried and semi-dry dates are the easiest to store:

  • Room temperature: in an airtight container in a cool, dry place, dried dates last for months.
  • Refrigerator: for longer shelf life (a year or more), store in the fridge. The texture stays chewy and does not harden.
  • Freezer: for very long-term stock, dates can be frozen and thawed before eating with little change to taste.

Storing Moist Dates (Sukari Rotab)

Rotab dates have higher moisture so they spoil faster at room temperature. Always store in the refrigerator in a sealed container. For the long term, the freezer is best. Take out only what you will eat.

Storing Ruthob Dates (Sukari & Barhi Ruthob)

Ruthob is the most vulnerable because it is very fresh and moist. It must be kept chilled as soon as received. Store in the fridge and eat relatively quickly, or freeze for longer keeping. Do not leave ruthob at room temperature for long.

Signs Dates Are No Longer Safe

  • Spots or a layer of mould (different from safe white sugar crystals).
  • A sour or fermented smell.
  • A slimy texture.

Note: a fine white layer on dates is often just natural sugar crystals that appear as sugar rises to the surface β€” this is safe. Distinguish it from fuzzy, smelly mould.
